Det ligger p\u00e5 n\u00e5got vis i v\u00e5rt arv att man tar hand om naturens resurser. Tyv\u00e4rr har utvecklingen gjort att vi blir att s\u00e4mre p\u00e5 att nyttja det vi tar hem fr\u00e5n skogen. \u00c4r sj\u00e4lv ganska duktig p\u00e5 att ta tillvara p\u00e5 k\u00f6ttet och f\u00e5 ut det mesta av det men det andra \u00e4r jag tyv\u00e4rr lite sl\u00f6 med.<\/p>\n<p>Att ta tillvara p\u00e5 ben f\u00f6r att koka buljong och fond \u00e4r ett exempel. Det \u00e4r en hel del jobb och det tar framf\u00f6rallt ganska mycket tid. Men de g\u00e5nger man tar sig tid och n\u00e4r den f\u00e4rdiga fonden \u00e4r klar \u00e4r man n\u00f6jd. N\u00e4r man sedan f\u00e5r anv\u00e4nda den som smaks\u00e4ttare i en mustig gryta, d\u00e5 \u00e4r det v\u00e4rt all m\u00f6da.<\/p>\n<p><strong>Viltfond <\/strong><em>(Ger cirka 2 liter f\u00e4rdig fond)<\/em><br \/>\n5 kg ben. S\u00e5gade i l\u00e4mpligt stora bitar<br \/>\n4 gula l\u00f6kar<br \/>\n4 vitl\u00f6ksklyftor<br \/>\n2 syrliga \u00e4pple<br \/>\n20 krossade enb\u00e4r<br \/>\n20 vitpepparkorn<br \/>\n20 lagerblad<br \/>\nTimjan, rosmarin, persilja och salt.<\/p>\n<p>L\u00e4gg benen i en l\u00e5ngpanna och s\u00e4tt in i ugnen p\u00e5 200 grader. Rosta dom v\u00e4l i ugnen i cirka 30 minuter. Med 5 kg ben f\u00e5r man dela det i tv\u00e5 omg\u00e5ngar.<br \/>\nGrovhacka l\u00f6k, vitl\u00f6k och \u00e4pple. Stek i sm\u00f6r tills blandningen f\u00e5tt fin f\u00e4rg.<br \/>\nL\u00e4gg alltsammans i en stor gryta. L\u00e4gg i kryddor, tills\u00e4tt lite salt (var f\u00f6rsiktigt med saltet. Reduceringskokningen p\u00e5 slutet koncentrerar smakerna). Fyll p\u00e5 med vatten s\u00e5 att det t\u00e4cker.<br \/>\nSjud p\u00e5 svag v\u00e4rme i fyra timmar. Fyll p\u00e5 med vatten s\u00e5 att det hela tiden t\u00e4cker.
